Description

This broiled salmon takes minutes to make and you’ll love the herb dijon sauce! Throw it on the salmon and dress some lettuce with it too. The perfect easy breezy weeknight meal!

Ingredients

  • 4 salmon filets (about 6 oz. each)
  • 3 tablespoons of fresh lemon juice
  • 1 garlic clove, minced
  • Course sea salt and ground pepper to taste
  • 1/4 cup Dijon mustard
  • 1 teaspoon extra-virgin olive oil
  • 3 tablespoons fresh chives
  • 3 tablespoons fresh basil

Instructions

  1. In medium bowl, stir together mustard, 2 tablespoons of lemon juice, oil, chives, basil and garlic. Put aside.
  2. Heat broiler with rack 4 inches from the heat.
  3. Pat salmon dry with paper towels and place on broiler pan. drizzle 1-2 tablespoons of lemon juice on each filet. Season with sea salt and pepper. Split the sauce into 2 bowls.
  4. Take one of the bowls and use a brush to slather all top and sides of salmon with mustard sauce.
  5. Broil for about 8 minutes until salmon is starting to flake and has some transparency in the middle. 
  6. Serve with fresh field greens and drizzle remaining sauce from the second bowl on top of fish and greens. Top with fresh ground pepper or shaved parmesan.

Notes

  • Feel free to substitute chives and basil with thyme or dill.
