Description
Enjoy these Instant pot chicken tacos with “fall-apart” chicken cooked in a sweet and spicy Korean BBQ sauce and served on warm tortillas. Top with a lime avocado crema which complements the chicken phenomenally.

Ingredients
Korean BBQ chicken
- 2 lbs. boneless chicken breasts or thighs, cut in 1/2
- 3/4 cup coconut aminos or low sodium soy sauce
- 1/4 cup rice vinegar
- 1/4 cup raw honey
- 2 tablespoons Gochujang (Korean chile paste)
- 1 inch fresh ginger, grated or 1 tablespoon of ginger minced
- 1/3 cup fresh cilantro chopped
- 8–10 corn, flour or brown rice tortillas warmed
Avocado crema
- 1 avocado, pitted
- 3/4 cup non-fat, plain greek yogurt
- juice of 2 limes
- 1/4 teaspoon red pepper flakes
- 1 tablespoon Korean chili paste
- 1 teaspoon cilantro
- 1/4–1/2 teaspoon sea salt (to taste)
Instructions
- In the bowl of your instant pot, combine the chicken, soy, vinegar, honey, Korean chili paste, ginger and garlic. Cover and cook on high pressure/manual for 8 minutes. Once done, use the natural or quick release function to release steam. Shred with 2 forks and stir in cilantro
- While that is cooking, make the crema. Combine all ingredients and place in blender or food processor.
- Once the chicken is finished, add it to the warm tortillas and top avocado crema, lime juice, jalapeño, diced red onions, guacamole, crumbled feta or queso, etc.
Slow cooker
- In the bowl of your slow cooker, combine the chicken, soy, vinegar, honey, Korean paste, ginger and garlic. Cover and cook on LOW for 6 hours or HIGH for 3-4 hours. Once the chicken is done cooking, shred with 2 forks and add the cilantro.
- While that is cooking, make the crema. Combine all ingredients and place in blender or food processor.
- Once the chicken is finished, add it to the warm tortillas and top avocado crema, lime juice, jalapeño, diced red onions, guacamole, crumbled feta or queso, etc.
Notes

- For the tortillas, I like to use Ezekial sprouted grain tortillas, warmed.
