Korean beef lettuce wraps

Description

These Korean beef lettuce wraps make a delicious, quick, healthy weeknight meal! Use ground turkey or lean beef and serve with lettuce or rice!

Ingredients

  • 1 head of lettuce (Boston, butter or bibb work well!)
  • 1 lb. of lean ground beef (or turkey)
  • 1/4 cup coconut aminos or low-sodium soy sauce
  • 1 tablespoon of sesame oil, divided in half
  • 2 tablespoons of Swerve brown (could use brown or coconut sugar)
  • 3 cloves of garlic, minced
  • 1/4 teaspoon ground ginger
  • 1/8 teaspoon red pepper flakes
  • 1 bunch green onions, split between green & white sections
  • 3 tablespoons rice wine vinegar
  • Sesame seeds (garnish)

Instructions

  1. In large skillet, brown the beef in 1/2 tbsp sesame oil.
  2. Add white part of onions and continue to cook until the beef is done. Drain fat.
  3. Whisk in bowl brown swerve, soy sauce, 1/2 tbsp sesame oil, garlic, ginger, rice wine vinegar and red pepper flakes. 
  4. Pour sauce over meat and allow it to reduce (3-5 minutes).
  5. Serve in lettuce wraps or over rice.
  6. Garnish with green onions and sesame seeds.
