This grilled chicken with dijon and balsamic vinegar is my sister’s recipe and even the pickiest eaters love it! It’s so easy and healthy!

You could let the chicken marinate for hours or you could whip this up right before cooking. The marinade is so flavorful, it’ll shine through regardless, which makes this recipe convenient for a quick weeknight meal! I use the same marinade for my pasta salad with balsamic vinaigrette.

Also, if you can’t grill it, no worries – it’s just as easy to pop it in the oven broiler for about 5 mins. a side.

  • Prepping the chicken image

I always slice my chicken in half horizontally (and sometimes thirds depending on how big the chicken breast). This keeps the ratio of marinade to chicken more even so you can really taste it in every bite. I also think it makes the chicken less tough.

There are many ways to marinade but my personal preference is to add the chicken to a big bowl, pour the marinade on top and mix it together. Once mixed, cover with saran wrap or press & seal to remove air and store in fridge until ready to cook.

I use this marinade for other meats, pasta salads and vegetables – it’s easy and such a great flavor combination.
