This chicken bruschetta will awaken your taste buds with the sweet, Italian flavors of tomato, fresh basil, balsamic vinegar and garlic. This is topped on an Italian-seasoned, grilled or seared chicken breast.
It’s officially tomato season and once our plants start producing, tomatoes go in everything around here! This chicken bruschetta is one of my favorite tomato recipes. Dinner can be on the table in 30 minutes – who doesn’t love that?

Bruschetta is one of those foods that are so simple that there’s no hope of hiding mediocre ingredients behind technique or presentation. If your tomatoes aren’t great, your bruschetta won’t be either.
I like to think of it as “Italian salsa” and it often tops toasted bread. It combines wonderful Italian flavors like tomato, basil and balsamic vinegar.
Topping it on chicken creates a wonderful, nutritious meal (and feel free to have your bread-toasted or not- on the side with olive oil…YUMMM).

- Slice & dice your tomatoes, onions, basil and garlic. Prep your chicken.
- Sear or grill chicken for approx. 5 mins. per side.
- Add veggies, oil, vinegar and seasoning to a bowl.
- Spoon over the chicken.

Whatever is ripe and in season! You can use a mix of heirloom varieties (some sweet and some tart), fleshier paste tomatoes like plums or even cherry tomatoes. I think the seeds contain so much great flavor so leave them in.
