This chicken bruschetta will awaken your taste buds with the sweet, Italian flavors of tomato, fresh basil, balsamic vinegar and garlic. This is topped on an Italian-seasoned, grilled or seared chicken breast.

It’s officially tomato season and once our plants start producing, tomatoes go in everything around here! This chicken bruschetta is one of my favorite tomato recipes. Dinner can be on the table in 30 minutes – who doesn’t love that?

what is chicken bruschetta?

Bruschetta is one of those foods that are so simple that there’s no hope of hiding mediocre ingredients behind technique or presentation. If your tomatoes aren’t great, your bruschetta won’t be either.

I like to think of it as “Italian salsa” and it often tops toasted bread. It combines wonderful Italian flavors like tomato, basil and balsamic vinegar.

Topping it on chicken creates a wonderful, nutritious meal (and feel free to have your bread-toasted or not- on the side with olive oil…YUMMM).

how to make chicken bruschetta?

This recipe is so simple and can be done in 4 easy steps for a quick weeknight meal!

  • Slice & dice your tomatoes, onions, basil and garlic. Prep your chicken.
  • Sear or grill chicken for approx. 5 mins. per side.
  • Add veggies, oil, vinegar and seasoning to a bowl.
  • Spoon over the chicken.

is chicken bruschetta healthy?

Definitely. This recipe has the perfect amount of macros (carbs, protein, fat) plus many other nutrients like fiber. It’s also Keto, Paleo and Whole30 compliant.

what do you serve with chicken bruschetta?

My favorite way to serve chicken bruschetta is on top of a salad with crusty, multi-grain bread on the side. Another option is to serve it over a bed of pasta (think parmesan noodles).

what tomatoes work best with bruschetta?

Whatever is ripe and in season! You can use a mix of heirloom varieties (some sweet and some tart), fleshier paste tomatoes like plums or even cherry tomatoes. I think the seeds contain so much great flavor so leave them in.

Ingredients

  • 2 large boneless, skinless chicken breasts halved horizontally to make 4 fillets

  • 3 teaspoons Italian seasoning

  • 2 teaspoons minced garlic

  • salt to taste

  • Bruschetta
  • 1 1/2 pounds in-season fresh tomatoes, preferably a mix of varieties, cored and diced

  • 1/4 cup diced red onion

  • 1/4 cup diced sweet onion (like vidalia)

  • 4 cloves garlic, minced

  • 1/4 cup fresh basil, thinly sliced into a chiffonade

  • 2 tablespoons olive oil

  • 1 tablespoons balsamic vinegar

  • sea salt to taste

  • 1/2 teaspoon red chili pepper flakes (optional)

Directions

  • Season chicken with Italian seasoning, garlic and salt. Heat oil in a grill pan or skillet (see notes if you want to grill chicken), and sear chicken breasts over medium-high heat until browned on both sides and cooked through (about 6 minutes each side). Remove from pan; set aside and allow to rest.
  • In a large bowl, combine tomatoes, onions, garlic, basil, oil, vinegar, salt and red chili peppers. If using wine vinegar, add a splash. Toss gently, taste, and add more vinegar or salt if desired.
  • When chicken is ready, spoon bruschetta over each breast.
  • Serve with vegetables, over salad or pasta. Top with parmesan cheese (optional).

Notes

  • To grill chicken, heat grill and grease chicken with olive oil (then add seasoning). Add chicken to grill and cook each side for about 5 minutes (depending on how thick chicken is). Remove the chicken when done and top with bruschetta.
