Instead of going through the drive-thru or ordering pizza, indulge in flavorful Korean bbq shredded chicken, enveloped in a warm tortilla shell and drizzled with a tangy, sweet cream sauce.
Add your favorite veggies like diced jalapeños, red onion, cilantro and a squeeze of lime to complete this 5-star dish!
Another bonus is the ease of this recipe – you can have it cooked in 8 minutes in the instant pot. Or, you can set it and forget it in a crock pot.

The chicken in these tacos are cooked in a robust Korean BBQ sauce which provides plenty of flavor and moisture to the taco! If you’d prefer to add salsa, you could (a peach salsa may pair nicely), however, it’s not necessary. Also, these tacos have a delicious lime avocado salsa which balances the flavors of the taco as well as provides a creamy texture.

These are so easy, you can do the chicken in an instant pot or you can slow cook the chicken in a crock pot. Both ways make for an easy weeknight meal!
If you’re using an instant pot, toss the chicken and sauce ingredients into the pot and cook them for 8 minutes. Once finished, shred the meat (easy breezy)!
While the chicken is cooking, you can make the crema.

First, cream is a slightly thickened cream often used to dollop over soups, tacos, or any dish that could benefit from a touch of richness. This creamy, slightly sour Mexican condiment falls somewhere between American sour cream and French crème fraîche.
To make the avocado crema, use a blender or food processor. Simply combine avocado, greek yogurt, lime, red pepper flakes, Korean chili paste, cilantro and sea salt! Season to taste. If you like extra heat, add more red pepper flakes.
Of course you don’t have to make the avocado crema but I encourage you to make it – it’s a fantastic complement to the chicken!
