Shake up your salad by enjoying this grilled chicken Caesar salad pizza! Your family will love you for it but they may be a little apprehensive at first. When you tell them you’re making Caesar salad pizza, they’ll look at you like you have two heads. But then, after they take their first bite, enjoy the looks of pleasure on their faces while you say, “I told you so”. (I would never do that;-).

Start off with crisp grilled pizza dough, drizzled with olive oil and sprinkled with sea salt. Top that with puddles of fresh, melted mozzarella, roasted garlic slices, and flavorful grilled chicken. Finally, add crisp lettuce coated with home-made Caesar dressing and shaved parmesan.

is pizza dough healthy?

I try to keep my white flour intake to a minimum so for this recipe, I make the dough using einkorn flour. Einkorn flour is made from einkorn wheat and it has many benefits. It lacks the gluten proteins that trigger symptoms of gluten sensitivity. It’s higher in protein and lower in carbohydrates than modern wheat. It is also richer in key vitamins and minerals than modern wheat. t lacks the gluten proteins that trigger symptoms of gluten sensitivity. Get Jovial’s einkorn flour here.

Another option is to buy whole wheat pizza dough in the refrigerator section of most grocery stores.

I used to be very intimidated to make pizza dough. I think it was due to the yeast – I felt like there was a lot of room for error. There’s really not. Dough takes 15 minutes to prepare and an hour or 2 to proof and then you’re good to go. You can make a big batch and freeze some.

There’s a recipe on the back of Jovial’s einkorn flour that I follow. I typically substitute honey for the sugar, both activate the yeast. If you do make this dough for this grilled chicken Caesar salad recipe, you can cut it in half. The called-for amount of ingredients will make about 4 small/medium crusts. This recipe needs 2.

First, make sure the grill is hot (450-500 degrees) before you lay the crust down. Brush olive oil over one side of the dough. Keep the brush and olive oil by the grill because you’ll want to brush the other side before you flip the dough.

Once you lay the dough on the grill, close the lid for 2 minutes. Lift the lid, brush to top-facing side with olive oil and then flip the dough with tongs. It should have stiffened by now which makes it very easy to flip. Cook for another 2 minutes. Take off the grill when it’s golden brown and has nice grill marks.

what chicken do I use for grilled chicken Caesar salad pizza?

This grilled chicken recipe has the perfect marinade for this Caesar salad. I love to grill a couple of pounds of chicken at the beginning of the week and store it in the fridge. This makes it easy to throw on pizza, salads, or fajitas at a moment’s notice. Slices of cold grilled chicken also make a great snack!

If you don’t have time to marinate chicken, simply slice the chicken breasts horizontally, rub with olive oil on both sides, and season generously with salt and pepper. Grill for about 3-4 minutes per side.

These steps are very easy:

  • Roast garlic & grill marinaded chicken. Put it aside.
  • Make Caesar dressing and put it in the fridge.
  • Roll the pizza dough; brush with olive oil and sea salt on one side.
  • Grill for 2 minutes per side (brush olive oil on the second side before you flip).
  • Add sliced mozzarella, grilled chicken slices, and roasted garlic to the dough and grill until melted.
  • Make the salad by mixing the lettuce, salad dressing, and grated parmesan cheese.
  • Top pizza crusts with salad and shaved parmesan.
  • Enjoy!

Start off with crisp grilled pizza dough, drizzled with olive oil and sprinkled with sea salt. Top that with puddles of fresh, melted mozzarella, roasted garlic slices, and flavorful grilled chicken. Finally, add crisp lettuce coated with home-made Caesar dressing and shaved parmesan.

Ingredients

  • 1 lb. pizza dough*

  • olive oil (for crust)

  • 2 cloves roasted or raw garlic (roasting instructions in notes)

  • 8 oz. fresh mozzarella, sliced

  • 1 chicken breast, grilled and cubed

  • 2 heads romaine, washed and cut into small pieces

  • 1/2 cup Caesar salad dressing (recipe below)

  • 1/2 cup grated parmesan plus some shaved parmesan to top pizza

  • kosher or sea salt to taste

  • fresh ground black pepper

  • Caesar dressing
  • 1/3 cup mayonnaise*

  • 1/4 cup lemon juice

  • 2 tbsp. olive oil

  • 2 tsp. dijon mustard

  • 1/2 cup parmesan cheese

  • 1 tsp. Worcestershire sauce

  • 1 tsp. sea or kosher salt

  • 1/2 tsp. ground black pepper

  • 2 cloves garlic, minced

Directions

  • Prepare a gas or charcoal grill to high heat. Make the Caesar dressing while the grill heats up. Add all ingredients to a blender or food processor and process until it’s emulsified and smooth. Place in refrigerator until you’re ready to use.
  • Cut the dough in 1/2 and form into 2 circles. Add flour to your counter, roll each circle of dough until it’s thin. Brush olive oil on one side of both of the crusts. Sprinkle sea salt on crust. Place each of the crusts on the hot grill and close the lid. Check after approx. 2 minutes. Brush the sides facing up with olive oil before flipping. Flip and cook with lid down for another 2 minutes. Take both crusts off the grill when they’re golden brown and have nice grill marks. Put them on a baking sheet near the grill.
  • Brush the tops of the crust with a little more olive oil. Add garlic slices, fresh mozzarella, and chicken. Place the 2 crusts back on the grill for a minute or 2, until the mozzarella has melted. Remove both crusts from grill.
  • Add Caesar dressing, grated parmesan and lettuce to a bowl. Mix and then spread on top of each pizza crust. Cut and serve topped with shaved parmesan.

Notes

  • To roast garlic, preheat your oven to 400 degrees. Cut off the top of a head of garlic so that the cloves are exposed. Place garlic in tin foil and drizzle olive oil on top. Place in the preheated oven for about 20 minutes, until the garlic cloves are soft. Squeeze them out of their shells and store them in the fridge. Add them to everything: pizza, omelets, marinades, salad dressings, nothing is off limits!
  • *For mayo, I recommend Primal Kitchen’s mayo made with avocado oil.
  • This recipe makes 2 small-medium pizzas.
