Shake up your salad by enjoying this grilled chicken Caesar salad pizza! Your family will love you for it but they may be a little apprehensive at first. When you tell them you’re making Caesar salad pizza, they’ll look at you like you have two heads. But then, after they take their first bite, enjoy the looks of pleasure on their faces while you say, “I told you so”. (I would never do that;-).

Start off with crisp grilled pizza dough, drizzled with olive oil and sprinkled with sea salt. Top that with puddles of fresh, melted mozzarella, roasted garlic slices, and flavorful grilled chicken. Finally, add crisp lettuce coated with home-made Caesar dressing and shaved parmesan.

is pizza dough healthy?

I try to keep my white flour intake to a minimum so for this recipe, I make the dough using einkorn flour. Einkorn flour is made from einkorn wheat and it has many benefits. It lacks the gluten proteins that trigger symptoms of gluten sensitivity. It’s higher in protein and lower in carbohydrates than modern wheat. It is also richer in key vitamins and minerals than modern wheat. t lacks the gluten proteins that trigger symptoms of gluten sensitivity. Get Jovial’s einkorn flour here.

Another option is to buy whole wheat pizza dough in the refrigerator section of most grocery stores.

I used to be very intimidated to make pizza dough. I think it was due to the yeast – I felt like there was a lot of room for error. There’s really not. Dough takes 15 minutes to prepare and an hour or 2 to proof and then you’re good to go. You can make a big batch and freeze some.

There’s a recipe on the back of Jovial’s einkorn flour that I follow. I typically substitute honey for the sugar, both activate the yeast. If you do make this dough for this grilled chicken Caesar salad recipe, you can cut it in half. The called-for amount of ingredients will make about 4 small/medium crusts. This recipe needs 2.

First, make sure the grill is hot (450-500 degrees) before you lay the crust down. Brush olive oil over one side of the dough. Keep the brush and olive oil by the grill because you’ll want to brush the other side before you flip the dough.

Once you lay the dough on the grill, close the lid for 2 minutes. Lift the lid, brush to top-facing side with olive oil and then flip the dough with tongs. It should have stiffened by now which makes it very easy to flip. Cook for another 2 minutes. Take off the grill when it’s golden brown and has nice grill marks.

what chicken do I use for grilled chicken Caesar salad pizza?

This grilled chicken recipe has the perfect marinade for this Caesar salad. I love to grill a couple of pounds of chicken at the beginning of the week and store it in the fridge. This makes it easy to throw on pizza, salads, or fajitas at a moment’s notice. Slices of cold grilled chicken also make a great snack!

If you don’t have time to marinate chicken, simply slice the chicken breasts horizontally, rub with olive oil on both sides, and season generously with salt and pepper. Grill for about 3-4 minutes per side.

These steps are very easy:

  • Roast garlic & grill marinaded chicken. Put it aside.
  • Make Caesar dressing and put it in the fridge.
  • Roll the pizza dough; brush with olive oil and sea salt on one side.
  • Grill for 2 minutes per side (brush olive oil on the second side before you flip).
  • Add sliced mozzarella, grilled chicken slices, and roasted garlic to the dough and grill until melted.
  • Make the salad by mixing the lettuce, salad dressing, and grated parmesan cheese.
  • Top pizza crusts with salad and shaved parmesan.
  • Enjoy!
